Pumpkin Stir-Fried Vermicelli, also known as Golden Vermicelli, is a popular dish among stir-fried vermicelli lovers—except for those who don't like pumpkin. Some versions of this dish have so many ingredients that the pumpkin itself becomes almost irrelevant. However, cooking is all about creativity and endless possibilities. You might just create your own unique version of stir-fried vermicelli by following your instincts.


Ingredients:

  • Vermicelli
  • Pumpkin: A suitable amount (depending on your preference and the size of the pumpkin)
  • Cabbage: 1/4 head
  • Onion: 1/2
  • Garlic: A suitable amount
  • Olive oil: A suitable amount
  • Ginger: A suitable amount
  • Soy sauce: A suitable amount
  • Salt: A pinch
  • Black vinegar: A suitable amount
  • Pepper: A suitable amount

Everyone's taste is different, so feel free to adjust the seasonings to your liking!




First, sauté the garlic and ginger in oil (either olive oil or salad oil is fine). Then add the onion and continue to sauté until fragrant. After a while, add the pumpkin and stir-fry. Pour in some soy sauce and salt, and mix everything well before adding the cabbage (you can also add the vermicelli first and then the cabbage). Next, add the vermicelli (pre-soaked in water), stir-fry, and then add a little water to let it simmer. Finally, sprinkle some black vinegar and pepper! This completes the simple vegetarian version of Pumpkin Stir-Fried Vermicelli.

You can also enhance the dish by adding ingredients like shredded meat, dried shrimp, shiitake mushrooms, or shredded carrots during the initial sautéing for a richer flavor.
